So since I am on this freakish diet that doesn’t allow for dairy, gluten or refined sugar you may be asking yourself how I ate pancakes. Well I found this interesting recipe on Pinterest and decided to try it last night for dinner. ( I am aware that pancakes are not a typical dinner food but I don’t ever cook so give me a break)
I also apparently suck at flipping pancakes so unlike the picture my pancakes were very lumpy and lopsided.
Banana Pancakes
1 ripe banana
2 eggs
cinnamon
Mush up the banana in a bowl. Add in two eggs. Scramble. Mix in cinnamon. Spray a pan with coconut oil and cook for 45sec to 1 minute on each side.
And BAM you have pancakes. I admit they don’t taste as good as regular pancakes but hey they aren’t bad!
